A roof collapses if there s no support rock wall within 6 squares of the tile.
This is useful for things like removing a large building without worrying about roof collapse or walling in vulnerable solar generators without blocking out the sun.
This means that the largest square room you can have is 10x10 internal.
I would not install other roof building mods with this one.

Removing an established roof is a low priority construction job.
Make sure you have the materials it s what that is.

A remove roof area will cause pawns to remove any roofs in a given area.

I think by default you have steel walls.
Enclosed areas will automatically prompt colonists to build a roof unless you apply a no roof region or if the structure is too large over 300 cells.
