This means that the largest square room you can have is 10x10 internal.
The case being that they have a longer range on their spawn zones.
Now they will spawn in tiles that do not have overhead mountain roofing.
If that distance is more then that then you will only get a partial roof around everywhere but the position where it lacks enough support 2 roof construction is a low priority.
If you removed 2 entire walls and the corner between those two sides last then that roof was too far away from any other supports.

You could dig in a shallow amount under the mountain and never have them bother you since you only built under the thin mountain roof.
A roof will not be fully built in a room that is more then 11 blocks between two parallel sides.
It seems the roof building is triggered only upon completion of an enclosed room.
